That looks pretty tasty Pete. Just a question about the water bath? So the pyrex dish sits inside another filled with water Yes? How deep?

About 1 cm, it's so the bottom doesn't burn.

Yeah, it's bad when that happens!

It happened to me in Queensland once. I fell asleep while sun-bathing naked and.......

Try soaking the raisins overnight before hand in Jack Daniels, They soak up a lot of fluid.  Then add them to your pudding.   One of my personel tricks for an excellant bread and butter pudding Grin

Spring Rolls:

1 Cabbage ( Finely Chopped)
5 Storks if Celery  ( Finely Chopped)
2  Carrots (Grated)
8  Spring Onions (Finely Chopped)
2 cups of Glass Noodles ( Soak in Warm Water)
1/4 Cup of Kikkoman Honey & Soy Sauce
1/4 Cup Sugar
500g Pork Mince.
1 splash of Essence of Terror.
60-80 Spring Roll wraps.

How to Assemble your concoction of Ingredients:

Get a Frying pan and Cook the Mince, making sure you separate it finely while cooking, so it's not in lumps, then put in a large Bowl.
Cook the Spring Onions and the Grated Carrots in the pan for a couple of Minutes, then put then in the big bowl with the Cooked Pork Mince.

Get the Wok fired up and put all the Finely chopped Cabbage in,add the Sugar, Honey & Soy, glass Noodles, essence of Terror and mix well in the Wok and Cook, make sure you keep turning it over so all the Cabbage is cooked.

After the Cabbage is reduced down,

Add the rest of the Ingredients  from the Bowl ( Cooked Meat Etc) and Mix well.

Then put the Fry Pan over the top to cover the wok and simmer for 15 Minutes.

Let the Mix Cool, then wrap with the Spring Roll Wrappers " there's a bit of a technique with this, like rolling a Joint"

Cook in hot Sump Oil until Golden Brown. Dip in Soy or Sweet Chilli Sauce

Make Sure You Put a bit of Man Sauce on the end of the Wrap to keep it from coming unwrapped " This adds that Special Taste".
